PUMPKIN PROTEIN SQUARES
Healthy pumpkin protein squares that are easy to make and take on the go and to use for both pre or post workout snacks.

Serves: 16 Squares
You need:
- 1 Cup Oat Flour
- 2 Scoops About Time Vanilla Whey Protein
- ½ tsp Baking Soda
- ¼ Cup Truvia (or stevia)
- 1 TBS Pumpkin Pie Spice
- 1 Cup Liquid Egg Whites
- 8 oz Pumpkin Puree
- ½ Cup Water
- Preheat oven to 350 degrees.
- Combine oat flour, vanilla whey protein, baking soda, Truvia, and pumpkin pie spice in a large mixing bowl.
- Combine liquid egg whites, pumpkin puree, and water in a small mixing bowl.
- Add wet ingredients to dry ingredients and mix together.
- Spray an 8x8 inch oven safe glass baking dish with cooking spray and pour mixture into dish.
- Bake for about 25 minutes or until knife comes out clean.
I’m not sure when my obsession with pumpkin initially started, but I’m thinking it was sometime over the last few years when my Instagram and Facebook feeds were suddenly blowing up with pictures of pumpkin recipes! Obviously, if you’re a frequent visitor of my blog, you know I love my chocolate and I love my peanut butter, and I never thought that pumpkin could ever be a serious competitor! But…well…I guess anything is possible in this world, because ever since this #PumpkinEverything phenomena began, I was hooked! AND if you don’t know what #PumpkinEverything is, then I am convinced that you must be hiding under a rock in the middle of nowhere.
